A delicious and hearty soup featuring ground beef, cheese tortellini, and fresh herbs.
Ingredients
Scale
- 1 pound ground beef (halal)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 28 ounces can crushed tomatoes
- 4 cups beef broth
- 1 package (9 oz) cheese tortellini
- 1 teaspoon Italian seasoning
- to taste salt and pepper
- to garnish fresh basil or parsley
Instructions
- In a large pot, brown the ground beef over medium heat until it’s fully cooked. Make sure to break it apart with a spoon to ensure even cooking.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent and fragrant, about 3-4 minutes.
- Pour in the crushed tomatoes and beef broth. Stir well to combine and bring the mixture to a gentle simmer.
- Add Italian seasoning, and season with salt and pepper to taste. Let it simmer for about 5 minutes to allow the flavors to mingle.
- Stir in the cheese tortellini and cook for an additional 5-7 minutes, or until the tortellini are tender and cooked through.
- Remove from heat and garnish with fresh basil or parsley before serving.
- Ladle the soup into bowls and dive into this hearty meal!
Notes
- For a leaner option, substitute ground beef with ground turkey or chicken.
- This soup can be stored in the refrigerator for up to 3 days.
- Freezing is not recommended as it may change the texture of the tortellini.
