Description

Delicious and healthy walnut and date balls, perfect for a snack or dessert.


Ingredients

Scale
  • 1 cup Walnuts
  • 6 large Medjool dates (3 oz or 92 gms without pits)
  • 2 tablespoons cocoa powder
  • 1 teaspoon coconut oil

Instructions

  1. Add all ingredients into a food processor, process for 1 to 2 minutes or until finely ground. Stop the machine, scrape the sides often, and grind as fine as possible. Do not be tempted to add any liquid such as water or milk. The mixture might look dry in the beginning, but as the machine runs, the natural oils in walnuts and coconut oil will add enough moisture to help it combine.
  2. Transfer the mixture to a bowl and gently knead it a few times with your hands until it comes together into a cohesive dough.
  3. Use one tablespoon measure dough to portion, then roll it between the palms of your hands to form smooth balls.
  4. Store them in the refrigerator—while the date balls may feel slightly sticky and a bit greasy when rolling, they will firm up nicely once chilled.
