Description

Delicious lemon pepper chicken with a crispy coconut flour coating.


Ingredients

  • 1 to 1 pounds boneless, skinless chicken breasts
  • ⅓ cup coconut flour (or all-purpose flour)
  • 1 tablespoon lemon pepper seasoning
  • ½ teaspoon lemon zest
  • ½ teaspoon salt (or to taste)
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter (divided)
  • 2 cloves garlic (minced)
  • ½ cup chicken broth
  • 2 teaspoons lemon juice
  • freshly chopped parsley (for garnish)
  • lemon slices (for garnish)

Instructions

  1. Prepare the flour mixture. In a shallow plate, combine coconut flour, lemon pepper seasoning, lemon zest, and salt.
  2. Prepare the chicken. Place the chicken breasts on a cutting board and, using a chef’s knife, cut the chicken breasts in half, longwise. You should have a total of 8 chicken pieces that are about a 1/4-inch-thick. Toss the chicken breasts in the flour mixture until coated on both sides.
  3. Cook. Heat the cooking oil in a large skillet over medium-high heat. Add the chicken breasts to the hot oil in a single layer, and cook for 3 to 4 minutes per side, or until cooked through. Depending on the skillet’s size, you may need to cook the chicken in batches. Cooking time will also depend on the size of the chicken breasts. Remove the cooked chicken from the skillet and set it aside on a plate.
  4. Make the sauce. Add 1 tablespoon of butter to the skillet, along with the minced garlic, and cook for 30 seconds. Slowly pour in the chicken broth and stir, scraping up the browned bits from the bottom of the skillet. Then stir in the lemon juice and cook for 3 to 4 minutes, or until the sauce has slightly reduced. Add the remaining butter and let it melt through.
  5. Combine. Return the chicken breasts to the skillet and cook for 1 minute, or until heated through.
  6. Serve. Remove from heat. Serve the lemon pepper chicken garnished with parsley and lemon slices.
