Description

This delicious sourdough focaccia is made with active sourdough discard, resulting in a flavorful bread that’s perfect for sharing.

Ingredients

Scale
  • 2 cups sourdough discard (active and bubbly)
  • 1 cup all-purpose flour (additional for dusting as needed)
  • 1 teaspoon salt (sea salt recommended)
  • 2 tablespoons olive oil (extra for drizzling)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped, or 1 teaspoon dried)
  • 1 tablespoon fresh thyme (chopped, or 1 teaspoon dried)
  • 0 cups warm water (approximately, adjust as needed)

Instructions

  1. In a large mixing bowl, combine 2 cups of active sourdough discard, 1 cup of all-purpose flour, and 1 teaspoon of sea salt. Stir until well blended.
  2. Toss in 2 cloves of minced garlic, 2 tablespoons of olive oil, and approximately ½ cup of warm water. Mix until a sticky dough forms.
  3. Incorporate 1 tablespoon each of chopped fresh rosemary and thyme into the dough, ensuring they’re evenly distributed for a burst of flavor.
  4. Gently cover the bowl with a damp cloth and let it rest in a warm spot for 1-2 hours until it puffs up slightly.
  5. Preheat your oven to 425°F (220°C), filling your kitchen with anticipation for that golden goodness.
  6. Generously grease a baking sheet with olive oil, then turn the dough onto it, allowing it to gently stretch into a rustic shape.
  7. Use your fingers to create dimples across the surface of the dough, allowing those nooks to hold onto olive oil and flavor.
  8. Drizzle additional olive oil over the top and sprinkle with sea salt for a savory touch.
  9. Place the focaccia in the oven and bake for 20-25 minutes, until it’s golden brown and the aroma of garlic fills the air.
  10. Once baked, remove from the oven and allow it to cool slightly before slicing into warm, fluffy pieces.

Notes
