Description

Delicious and moist Lemon Blueberry Donuts perfect for breakfast or a sweet treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup melted butter
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup blueberries (Fresh blueberries are best. If using frozen, toss in flour before adding to the batter.)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or butter.
  2. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Mix well to ensure all ingredients are evenly distributed.
  3. In a separate bowl, whisk together the buttermilk, melted butter, egg, lemon juice, and lemon zest until fully combined.
  4. Gradually pour the wet mixture into the dry ingredients. Stir until just combined; do not overmix.
  5. Carefully fold in the blueberries.
  6. Using a piping bag or a spoon, fill each donut mold approximately halfway with the batter.
  7. Place the pan in the preheated oven and bake for about 10–15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the donuts cool in the pan for a few minutes before transferring them to a wire rack. Once cooled, drizzle with a lemon glaze made from powdered sugar and lemon juice.

Notes

  • For best results, use fresh blueberries. If using frozen, toss them in a little flour before adding to the batter to prevent them from sinking.
