Ingredients

  • 1 large ripe mango (diced)

  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red bell pepper (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 teaspoon honey (optional)
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper (to taste)

Instructions

  1. In a medium pot, combine black rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes or until rice is tender and water is absorbed.
  2. In a small bowl, whisk together olive oil, lime juice, honey, salt, and black pepper until well combined.
  3. In a large bowl, combine cooked black rice, diced mango, avocado, cherry tomatoes, red bell pepper, and cilantro.
  4. Pour the dressing over the salad and gently toss to combine. Serve immediately or chill in the refrigerator for 30 minutes before serving.
