Buffalo Chicken Mac and Cheese

Description

A creamy and cheesy macaroni dish topped with crispy buffalo chicken.


Ingredients

Scale
  • 1 lb frozen popcorn chicken
  • 4 cups water
  • 2 cups heavy cream (35%MF)
  • 1 lb macaroni noodles
  • 10 oz condensed cheddar cheese soup
  • 1 1/2 tablespoon garlic chowder
  • 1 1/2 tablespoon onion powder
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon pepper
  • 4 cups shredded mozzarella and cheddar cheese blend
  • 1 cup Buffalo sauce
  • 1/3 cup ranch dressing

Instructions

  1. Cook the popcorn chicken according to the directions on the package.
  2. Preheat the oven to 400F.
  3. Pour water and heavy cream into a large pot on the stove.
  4. Bring the water and cream to a boil.
  5. Once the liquid is boiling, add the macaroni noodles to the pot.
  6. Stir until all of the noodles are submerged in the liquid.
  7. Place a lid on the pot and reduce heat to medium-low.
  8. Leave the macaroni to continue cooking, stirring occasionally, for 10 minutes.
  9. After 10 minutes, remove the lid and stir well.
  10. Add the condensed cheddar soup, garlic powder, onion powder, salt and pepper to the pot.
  11. Stir until all of the ingredients are fully combined.
  12. Add 2 cups of the shredded cheese to the pot and stir well again.
  13. Dump the macaroni and cheese into a greased 9 x 13 inch baking dish.
  14. Sprinkle the cooked popcorn chicken on top of the mac and cheese.
  15. Pour the Buffalo sauce on top of the popcorn chicken.
  16. Drizzle the ranch dressing on top of the Buffalo sauce.
  17. Sprinkle the remaining 2 cups of shredded cheese on top.
  18. Place the dish in the oven and bake until the cheese on top is completely melted and just starting to brown around the edges, 16-18 minutes.
  19. Remove the dish from the oven and leave the mac and cheese to sit for a few minutes before scooping and serving.
  20. Enjoy!

  • Feel free to add more spices or veggies to customize the dish.
