Description

A flavorful and creamy coconut chicken rice dish that is easy to prepare and perfect for family dinners.


Ingredients

  • 2 cups long-grain rice
  • 1 lb boneless, skinless chicken thighs
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat a drizzle of oil in a large pot over medium heat, then add diced onion, minced garlic, and diced bell pepper; cook until softened, about 3-4 minutes.
  2. Add the chicken thighs to the pot and cook until browned on all sides, about 5-7 minutes.
  3. Stir in the thyme, cumin, salt, and pepper, and toss to coat chicken and veggies.
  4. Add in the rice and mix well with the chicken and vegetables.
  5. Pour in the coconut milk and chicken broth; bring to a boil.
  6. Reduce heat to low, cover the pot, and simmer for about 20 minutes.
  7. Fluff the rice with a fork, garnish with sliced green onions, and serve.
