- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon dried basil
- ¼ teaspoon red pepper flakes (optional)
- 3 tablespoons tomato paste
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 package (9–12 ounces) cheese tortellini
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh basil, chopped (for garnish)
Instructions
- Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and cook until soft and translucent, about 4–5 minutes. Stir in the garlic, Italian seasoning, basil, and red pepper flakes. Cook for another minute until fragrant.
- Build the tomato base: Add the tomato paste and stir to coat the onions and garlic. Let it cook for 1–2 minutes to deepen the flavor. Pour in the crushed tomatoes and vegetable broth. Stir well and bring to a gentle simmer.
- Cook the tortellini: Add the cheese tortellini directly into the simmering broth. Cook according to package instructions, usually about 5–7 minutes. The pasta will become tender and slightly plump as it absorbs the tomato flavor.
- Make it creamy and cheesy: Remove from heat and stir in the heavy cream. Then add the mozzarella and Parmesan cheese. Stir gently until fully melted and smooth.
- Season and serve: Adjust with salt and black pepper. Ladle into bowls and top with fresh basil. Serve hot and enjoy every spoonful.

- For a spicier soup, add more red pepper flakes.
