Description

This delicious Brown Sugar Buttercream Cake is layered with a sweetened condensed milk filling and topped with mini chocolate chips.


Ingredients

Scale
  • 3 sticks salted butter, softened
  • 1½ cups brown sugar
  • 4 eggs, at room temp
  • 2 tsp. vanilla
  • 2 2/3 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 cup milk
  • 4 Tbsp salted butter, at room
  • 6 Tbsp packed brown sugar
  • 1/2 tsp vanilla
  • 1 cup + 2 Tbsp flour
  • 7 oz (1/2 can) sweetened condensed milk
  • 1/4 cup mini semi-sweet chocolate chips
  • 1 Batch of Brown Sugar Buttercream
  • 1 Batch of Fresh Chocolate Chip Cookies

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, cream together the softened butter and brown sugar.
  3. Add the eggs one at a time, beating well after each one.
  4. Add vanilla.
  5. In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
  6. Alternate adding the dry ingredients and the milk to the batter, beginning and ending with the dry ingredients.
  7. Divide the batter between (2) prepared 8 or 9 inch pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool for 10 minutes in the pan, flip out onto a wire rack, and allow to cool completely.
  10. Cream together the butter and brown sugar for about 2 minutes.
  11. Add in the vanilla, then flour, and then the sweetened condensed milk.
  12. Gently stir in the mini chocolate chips.
  13. Spread the filling on one layer of the cake, then put on the top layer.
  14. Make a dam of frosting on the edges and fill in the middle to prevent spilling.
  15. Frost the cake and decorate with cookies and/or chocolate chips.
  16. Enjoy!

Notes

  • Use homemade cake release for easier removal of the cakes from the pans.
  • This filling is squishy; adjust your frosting strategy accordingly.
  • Don’t be tempted to eat the leftover sweetened condensed milk straight from the can!
