- ¼ cup long-grain white rice
- 1 cup milk
- 2 tablespoons sugar
- ⅛ teaspoon salt
- ½ tablespoon cocoa powder
- ¼ teaspoon vanilla extract (or ½ teaspoon of crème de cacao)
- 2 tablespoons semisweet chocolate chips
Instructions
- Add the rice, milk, sugar, and salt to a 1-quart saucepan. Cook over medium heat, stirring occasionally, until the rice is tender and the mixture thickens, about 20 minutes.
- Remove the saucepan from the heat. Stir in the cocoa powder and vanilla.
- Add the chocolate chips and stir until fully melted and smooth.
- Transfer to a bowl, let cool for 10 minutes, and serve warm.
Notes
- This pudding can be served warm or chilled.
- For a richer flavor, you can substitute half-and-half for the milk.
