Description

A delicious jam made with fresh cranberries and strawberries, perfect for spreading on toast or using in desserts.

Ingredients

Scale
  • 2 cups fresh cranberries (or thawed frozen, drained)
  • 2 cups chopped fresh strawberries (or thawed frozen, drained)
  • 2 medium apples (peeled, cored and finely diced)
  • 1 medium orange (zested and juiced, you’ll need about 1/4 cup juice)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 4 cups granulated sugar
  • 1 pouch Certo liquid pectin (3 ounces)
  • 1 tablespoon vanilla extract

Instructions

  1. Wash jars, lids and bands. Keep jars hot in simmering water until ready to fill.
  2. In a large saucepan, stir together the cranberries, strawberries, apples and orange juice (save orange zest for adding at the end).
  3. Stir in the cinnamon, nutmeg, cloves, and sugar. Bring to a simmer over medium-high heat.
  4. Simmer for about 5 minutes, stirring occasionally, until the cranberries pop.
  5. Remove the pot from the heat and immediately stir in the Certo liquid pectin, orange zest and vanilla.
  6. Place back on the heat and stir constantly for 1 minute. Then remove from heat.
  7. Ladle hot jam into hot jars, leaving ¼-inch headspace. Wipe rims clean, screw on lids and bands until fingertip-tight.
  8. Process jars in a water-bath canner for 10 minutes (adjust for altitude as needed).
  9. Remove and let cool undisturbed for 12–24 hours. Check seals before storing.

Notes
