Description

A delicious roasted potato dish topped with fluffy dill ricotta.


Ingredients

  • 2 lbs Yukon Gold Potatoes
  • 3 tbsp extra virgin olive oil
  • Zest of 1 lemon
  • 1/4 cup fresh dill, chopped
  • 1 cup ricotta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wash and optionally peel the Yukon Gold potatoes; cut them into bite-sized chunks.
  3. In a large bowl, toss the potato chunks with olive oil, lemon zest, salt, and pepper until evenly coated.
  4. Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer. Roast for 30-35 minutes until golden brown and fork-tender.
  5. While the potatoes roast, mix ricotta cheese with chopped dill, salt, and pepper in a bowl; whip until light and fluffy.
  6. Serve roasted potatoes on plates with generous dollops of dill whipped ricotta and an optional drizzle of olive oil.
