A delicious roasted potato dish topped with fluffy dill ricotta.
Ingredients

- 2 lbs Yukon Gold Potatoes
- 3 tbsp extra virgin olive oil
- Zest of 1 lemon
- 1/4 cup fresh dill, chopped
- 1 cup ricotta cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Wash and optionally peel the Yukon Gold potatoes; cut them into bite-sized chunks.
- In a large bowl, toss the potato chunks with olive oil, lemon zest, salt, and pepper until evenly coated.
- Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer. Roast for 30-35 minutes until golden brown and fork-tender.
- While the potatoes roast, mix ricotta cheese with chopped dill, salt, and pepper in a bowl; whip until light and fluffy.
- Serve roasted potatoes on plates with generous dollops of dill whipped ricotta and an optional drizzle of olive oil.
