A refreshing mango salsa that pairs well with chips, tacos, or grilled chicken.
Ingredients

- 2 ripe mangoes, diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 jalapeño pepper, minced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1/4 teaspoon salt
Instructions
- Peel and dice the mangoes into small cubes.
- Dice the red bell pepper and red onion finely.
- Mince the jalapeño, removing seeds for less heat.
- Chop the fresh cilantro.
- In a large bowl, combine mango, bell pepper, onion, jalapeño, and cilantro.
- Add lime juice and salt over the top.
- Gently toss all ingredients together.
- Let sit for at least 10 minutes before serving.
- Taste and adjust lime juice or salt as needed.
Notes
- Serve with tortilla chips or as a topping for grilled meats.
- This salsa is best enjoyed fresh, but can be stored in the refrigerator for up to 2 days.
