Roll Cake with Cream and Berries

Description

A delicious roll cake filled with creamy vanilla and topped with fresh berries.


Ingredients

  • 4 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • powdered sugar (for dusting)
  • 1 cup heavy whipping cream, cold
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • pinch of salt
  • fresh berries (raspberries, strawberries)
  • mint leaves
  • additional powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a large mixing bowl, beat the eggs on high speed for about 5 minutes until thick and pale yellow. Gradually add the granulated sugar while beating, until the mixture is fluffy.
  3. Beat in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
  4. Spread the batter evenly into the prepared pan. Bake for 10-12 minutes, or until the top springs back when lightly touched.
  5. Immediately loosen the cake from the edges of the pan and invert it onto a clean kitchen towel dusted generously with powdered sugar. Carefully peel off the parchment paper.
  6. Starting from one short end, gently roll the warm cake and towel together into a log. Place seam-side down on a wire rack and allow to cool completely, about 1 hour.
  7. While the cake cools, make the filling. In a chilled bowl, beat the cold heavy whipping cream, powdered sugar, vanilla extract, and a pinch of salt until stiff peaks form.
  8. Carefully unroll the cooled cake. Spread the vanilla cream evenly over the cake, leaving a small border around the edges.
  9. Gently re-roll the cake, using the towel to help guide it, this time without the towel inside. Wrap the roll in plastic wrap and refrigerate for at least 2 hours to set.
  10. Before serving, dust with powdered sugar. Slice and serve with fresh berries and mint if desired.
