A delicious roll cake filled with creamy vanilla and topped with fresh berries.

- 4 large eggs, room temperature
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- powdered sugar (for dusting)
- 1 cup heavy whipping cream, cold
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- pinch of salt
- fresh berries (raspberries, strawberries)
- mint leaves
- additional powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- In a large mixing bowl, beat the eggs on high speed for about 5 minutes until thick and pale yellow. Gradually add the granulated sugar while beating, until the mixture is fluffy.
- Beat in the vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
- Spread the batter evenly into the prepared pan. Bake for 10-12 minutes, or until the top springs back when lightly touched.
- Immediately loosen the cake from the edges of the pan and invert it onto a clean kitchen towel dusted generously with powdered sugar. Carefully peel off the parchment paper.
- Starting from one short end, gently roll the warm cake and towel together into a log. Place seam-side down on a wire rack and allow to cool completely, about 1 hour.
- While the cake cools, make the filling. In a chilled bowl, beat the cold heavy whipping cream, powdered sugar, vanilla extract, and a pinch of salt until stiff peaks form.
- Carefully unroll the cooled cake. Spread the vanilla cream evenly over the cake, leaving a small border around the edges.
- Gently re-roll the cake, using the towel to help guide it, this time without the towel inside. Wrap the roll in plastic wrap and refrigerate for at least 2 hours to set.
- Before serving, dust with powdered sugar. Slice and serve with fresh berries and mint if desired.
