Instructions

  1. Caramelize the Onions: Melt the butter with olive oil in a large skillet over medium-low heat. Add the sliced onions and cook slowly for about 30–40 minutes, stirring occasionally. The onions should become deeply golden, soft, and sweet.
  2. Add Garlic and Seasoning: Once the onions are beautifully caramelized, stir in the minced garlic, thyme, salt, and black pepper. Cook for another minute until fragrant.
  3. Pour in the Broth: Add the beef broth and Worcestershire sauce. Let the mixture simmer for about 10 minutes so the flavors can deepen and blend together.
  4. Cook the Pasta: While the sauce simmers, cook the pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  5. Make It Creamy: Reduce the heat and stir the heavy cream into the onion mixture. Add the Gruyère, mozzarella, and Parmesan cheese gradually, stirring until melted and smooth.
  6. Combine Everything: Add the cooked pasta to the skillet and toss until fully coated. If needed, add a splash of reserved pasta water to loosen the sauce.
  7. Garnish and Serve: Sprinkle fresh parsley over the top and serve immediately while hot and cheesy.
