Ingredients

- 3 cups cabbage (shredded or thinly sliced)
- 1 cup shredded carrots
- 1 medium onion (thinly sliced)
- 2/3 cup greek yogurt (or use avocado oil mayo)
- 2 tablespoons olive oil
- 1 clove garlic (minced)
- 1 tablespoon dijon mustard
- 1 tablespoon apple cider vinegar
- kosher salt and pepper (to taste)
- 1 tablespoon honey or agave
Instructions
- Place the prepped veggies into a large salad bowl.
- In a small bowl, whisk the dressing ingredients: greek yogurt, olive oil, garlic, dijon mustard, apple cider vinegar, and kosher salt and pepper.
- Pour the dressing over the veggies and thoroughly toss well to combine.
- Refrigerate for 1 hour prior to serving to allow the flavors to meld and the cabbage to tenderize.
