Description
Delicious strawberry banana chocolate cupcakes topped with chocolate ganache and fresh strawberries.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/2 cup mashed bananas
- 1/2 cup strawberries, chopped
- 1/2 cup chocolate chips
- 1/4 cup heavy cream
- 1/4 cup chocolate syrup
- Fresh strawberries, sliced (for garnish)
- Chocolate shavings (for garnish)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients in three parts, alternating with sour cream, beginning and ending with the dry ingredients. Mix until just combined.
- Fold in mashed bananas and chopped strawberries.
- Evenly distribute the batter among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely.
- In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add chocolate chips, stirring until melted and smooth.
- Once cupcakes are cooled, spread a layer of chocolate ganache over each one with chocolate syrup and garnish with fresh strawberry slices and chocolate shavings.
