Description
These delicious taco bowls feature seasoned ground beef paired with roasted sweet potatoes, cottage cheese, and a hint of hot honey for a flavorful meal.

- 1 lb lean ground beef
- 1 Tbsp extra virgin olive oil
- 1 Tbsp chili powder
- 2 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ½ tsp kosher salt (more to taste)
- ¼ tsp black pepper
- 2 Tbsp tomato paste
- ½ cup water
- 1 lb sweet potatoes (about 2 medium potatoes)
- 1 Tbsp extra virgin olive oil
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp kosher salt
- ¼ tsp black pepper
- 2 cups cottage cheese
- 2 small avocados, diced
- 2 Tbsp hot honey
- cherry tomatoes & mixed greens (optional)
Instructions
- Preheat the oven to 425℉ (218°C). Line a sheet pan with parchment paper and spray with olive oil spray.
- Wash and peel your sweet potatoes. On a cutting board, use a sharp knife to cut them into 1 inch cubes.
- In a large bowl or directly on the baking sheet, coat the sweet potato cubes with olive oil, kosher salt, pepper, garlic powder, and smoked paprika.
- Add the sweet potatoes to the baking sheet in a single layer and bake in the preheated oven for 25-30 minutes. Oven times will vary.
- Heat a large skillet on medium heat. Add olive oil until heated. Add the ground beef and break apart the beef with a wooden spoon or masher.
- Cook for 2-3 minutes until the beef starts to brown and then add the seasonings, water, and tomato paste.
- Continue to cook until the beef is cooked through, about 5-7 minutes.
- Assemble the taco bowls by adding the cooked ground beef, cottage cheese, avocado, sweet potatoes, and tomatoes and greens (if using) to a serving bowl.
- Add a drizzle of hot honey on top.
- Hint: if you have an air fryer, you can make the sweet potatoes in it instead. Preheat your air fryer to 400℉ (200°C) for a couple of minutes. Add your seasoned sweet potato cubes to the air fryer basket in a single layer. Air fry for 10-12 minutes, giving them a good shake about 5 minutes through. Cook time may vary slightly depending on your air fryer.
