Description

Ingredients

  • 1 (4-5 lb) Prime Rib Roast
  • 4 cloves Fresh Garlic, minced
  • 1/2 cup Unsalted Butter, softened
  • 2 sprigs Fresh Rosemary, chopped
  • 2 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Dijon Mustard
  • 2 tbsp Olive Oil

Instructions

  1. Remove the prime rib from the fridge and let it sit at room temperature for 30 minutes.
  2. Preheat oven to 450°F (232°C).
  3. Pat the roast dry, rub it with olive oil, then coat generously with Dijon mustard, salt, pepper, minced garlic, and rosemary.
  4. Mix softened butter with minced garlic and chopped rosemary in a bowl.
  5. Place the seasoned roast in a roasting pan bone-side down and roast for 20 minutes.
  6. Reduce oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare (about 1-1.5 hours).
  7. Allow the roast to rest for at least 15-20 minutes before slicing.
