Ingredients

  • 1214 lbs whole turkey
  • 1 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 3 tbsp fresh thyme, chopped
  • 3 tbsp fresh rosemary, chopped
  • 3 tbsp fresh sage, chopped
  • 2 halved lemons
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the turkey dry with paper towels.
  3. In a bowl, mix the softened butter, minced garlic, and fresh herbs until well combined.
  4. Gently separate the turkey skin from the meat; rub half of the herb butter under the skin and season inside with salt and pepper.
  5. Stuff the cavity with halved lemons and remaining herb sprigs.
  6. Place turkey in a roasting pan breast-side up; cover loosely with foil.
  7. Roast for approximately 13-15 minutes per pound until internal temperature reaches 165°F (74°C). Remove foil in the last hour for crispiness.
  8. Let rest before carving.
