- 12–14 lbs whole turkey
- 1 cup unsalted butter, softened
- 4 cloves garlic, minced
- 3 tbsp fresh thyme, chopped
- 3 tbsp fresh rosemary, chopped
- 3 tbsp fresh sage, chopped
- 2 halved lemons
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (165°C).
- Pat the turkey dry with paper towels.
- In a bowl, mix the softened butter, minced garlic, and fresh herbs until well combined.
- Gently separate the turkey skin from the meat; rub half of the herb butter under the skin and season inside with salt and pepper.
- Stuff the cavity with halved lemons and remaining herb sprigs.
- Place turkey in a roasting pan breast-side up; cover loosely with foil.
- Roast for approximately 13-15 minutes per pound until internal temperature reaches 165°F (74°C). Remove foil in the last hour for crispiness.
- Let rest before carving.
