Description

Delicious BBQ chicken quesadillas made with shredded cheese and hot honey for an extra kick.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lbs)
  • 1/4 cup hot honey
  • 1/2 cup BBQ sauce
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 4 large flour tortillas
  • 2 tsp olive oil

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken with salt and pepper; grill for 6-7 minutes per side until cooked through.
  2. Mix hot honey with BBQ sauce in a bowl until well combined.
  3. Shred the cooked chicken using two forks.
  4. On a tortilla, layer half with shredded cheese, then add shredded chicken, drizzle sauce, and top with more cheese.
  5. Fold tortilla in half and cook in olive oil over medium heat for 3-4 minutes on each side until golden brown.
  6. Slice into wedges and serve warm with extra sauce if desired.

Notes

  • For added flavor, you can sprinkle some chopped cilantro inside the quesadilla.
