Description
Delicious BBQ chicken quesadillas made with shredded cheese and hot honey for an extra kick.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 1/4 cup hot honey
- 1/2 cup BBQ sauce
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 4 large flour tortillas
- 2 tsp olive oil
Instructions
- Preheat grill or skillet over medium heat. Season chicken with salt and pepper; grill for 6-7 minutes per side until cooked through.
- Mix hot honey with BBQ sauce in a bowl until well combined.
- Shred the cooked chicken using two forks.
- On a tortilla, layer half with shredded cheese, then add shredded chicken, drizzle sauce, and top with more cheese.
- Fold tortilla in half and cook in olive oil over medium heat for 3-4 minutes on each side until golden brown.
- Slice into wedges and serve warm with extra sauce if desired.
Notes
- For added flavor, you can sprinkle some chopped cilantro inside the quesadilla.
- Serve with salsa or guacamole for dipping.
