Description

A delicious stir-fry with ground chicken, fresh vegetables, and a sweet and savory sauce.


Ingredients

  • 1 lb ground chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell peppers (any color), diced
  • 1 cup pineapple chunks (fresh or canned)
  • ½ cup ketchup
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil

Instructions

  1. Heat a large skillet over medium heat and add a splash of oil. Sauté minced garlic and diced onion until fragrant and translucent.
  2. Add ground chicken to the skillet, breaking it apart as it cooks for about 5-7 minutes until no longer pink.
  3. Stir in diced bell peppers and pineapple chunks, cooking for an additional 5 minutes until vibrant.
  4. In a small bowl, whisk together ketchup, soy sauce, brown sugar, rice vinegar, and sesame oil until smooth.
  5. Pour the sauce over the chicken mixture, stirring to coat evenly. Let simmer for 3-5 minutes until heated through.
