Description

A moist and flavorful lemon poppy seed cake topped with a sweet glaze.


Ingredients

Scale
  • 2½ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups granulated white sugar
  • ½ cup (1 stick) salted butter, (at room temperature)
  • 3 large eggs
  • 1 cup buttermilk
  • ¼ cup poppy seeds
  • 2 tablespoons finely grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups powdered sugar (measure, then sift)
  • ¼ cup (½ stick) salted butter, (melted)
  • 2 tablespoons finely grated lemon zest
  • ¼ cup freshly squeezed lemon juice

Instructions

  1. Preheat the oven to 325℉. Spray a 12-cup fluted tube cake pan with baking spray (or rub with shortening and dust with flour).
  2. In a medium bowl, whisk together the flour, baking soda and salt.
  3. In a large bowl, use an electric mixer to combine the sugar and butter until light and fluffy (2 minutes). Beat in the eggs, one at a time.
  4. On low speed, mix in the flour alternately with the buttermilk, scraping the bowl occasionally until the flour is mixed in. Stir in the poppy seeds, lemon zest and lemon juice.
  5. Scrape the batter into the prepared pan.
  6. Bake 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the glaze. In a medium bowl, whisk together the glaze ingredients until smooth; cover and set aside.
  8. When the cake comes out of the oven, poke several holes in the cake with a skewer (while it is still in the pan). Stir the glaze. Pour about ¼ of the glaze on top of the cake. Set the glaze aside.
  9. Cool the cake in the pan for 20 minutes. Invert the cake onto a serving plate.
  10. Let the cake cool for about an hour. Then drizzle the glaze on top of the cake (heat it a little in the microwave, if needed), allowing some to drizzle down the sides.

Notes

  • Make sure to sift the powdered sugar for a smooth glaze.
  • If desired, add more lemon zest to enhance the flavor.
