Description

Ingredients

  • 2 medium fresh oranges (zest and juice)
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 cinnamon stick
  • 1 tsp ground ginger
  • 2 tbsp honey
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Gather all ingredients. Finely chop the onion and mince the garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté the onions until translucent (about 5 minutes), then add minced garlic and cook for another minute.
  3. Add boneless chicken thighs to the skillet; season with salt and pepper. Brown the chicken on both sides (approximately 6 minutes per side).
  4. Incorporate the cinnamon stick, ground ginger, honey, orange juice, orange zest, and chicken broth into the skillet. Stir well and bring to a gentle simmer.
  5. Cover and let simmer on low heat for about 30 minutes to meld flavors.
  6. In the last 10 minutes of cooking, slice one orange into rounds and place atop the chicken to caramelize slightly.
  7. Serve warm, drizzled with sauce.
