Description

Delicious homemade oatmeal raisin cookies with warm spices and a soft texture.


Ingredients

  • 1 cup flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup unsalted butter (softened)
  • ½ cup dark brown sugar (packed)
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 ½ cups oats
  • 1 ¼ cup raisins

Instructions

  1. Preheat the oven to 350 degrees. Grease a baking sheet with nonstick cooking spray and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the butter, dark brown sugar, and granulated sugar. Mix in the egg and vanilla.
  4. Add the flour mixture into the wet mixture and stir until just combined (be careful not to overmix).
  5. Stir in the oats and then fold in the raisins.
  6. Using a cookie scoop or spoon, add scoops of about 1 tablespoon cookie dough to the prepared cookie sheet. The cookies should be about 2 inches apart.
  7. Bake for 12-13 minutes in the preheated oven. The cookies should be evenly golden brown on top with cracks that are soft.
  8. Let the cookies cool for 2-3 minutes before transferring to a wire rack to cool completely.
