Description

A delicious dessert made with peanut butter and glutinous rice flour.

Ingredients

Scale
  • 1 cup Peanut Butter (Smooth or crunchy based on preference)
  • 1/2 cup Sweetened Condensed Milk (Can substitute with honey)
  • 1 cup Glutinous Rice Flour (Do not use regular flour)
  • 1/4 cup Sugar (Adjust to taste)
  • 1 cup Water (Be precise for perfect consistency)
  • 1/4 cup Cornstarch (For dusting work surface)

Instructions

  1. In a mixing bowl, combine peanut butter and sweetened condensed milk until smooth. Cover and refrigerate for about 15 minutes.
  2. In a nonstick pan, blend glutinous rice flour, sugar, and water. Stir over medium heat for 5-7 minutes until thick and smooth. Allow cooling for 10 minutes.
  3. Dust working surface with cornstarch. Roll the dough into a rectangle about ¼-inch thick and cut into 8 pieces.
  4. Shape a tablespoon of filling into a ball and place it in the center of a dough piece. Seal the edges to encase the filling.
  5. Repeat the process with remaining pieces. Arrange on parchment paper and freeze for 1 hour for firmer texture, or enjoy fresh.

Notes

  • Make sure to use glutinous rice flour for the right texture.
  • Adjust sugar according to your taste preferences.
