Description

These grilled lamb skewers with pineapple are a flavorful and vibrant dish perfect for summer gatherings.

Ingredients

Scale
  • pounds lamb shoulder or lamb leg, cut into cubes
  • 3 cups fresh pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 1 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a large bowl, combine barbecue sauce, honey, soy sauce, olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir until smooth and glossy.

  2. Marinate the Lamb: Add the lamb cubes to the marinade and toss until evenly coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

  3. Assemble the Skewers: Thread the lamb, pineapple chunks, bell peppers, and onion onto skewers, alternating ingredients for colorful presentation.

  4. Grill the Skewers: Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 10–12 minutes, turning occasionally and brushing with extra barbecue sauce as they cook.

  5. Serve Warm: Remove the skewers from the grill and let them rest for a few minutes before serving. Serve warm with rice, grilled vegetables, flatbread, or a crisp salad for a complete summer-inspired meal.

Notes

  • For deeper flavor, marinate overnight.
