A delicious red velvet cookie cake with cream cheese frosting.

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 teaspoon white vinegar
- 1 tablespoon red gel food coloring

- 2 tablespoons unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup white chocolate chips
- 4 ounces cream cheese, softened
- 2 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream
- 2 tablespoons sprinkles, optional
Instructions
- Preheat the oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper for easier removal.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and fluffy.
- Mix in the egg, vanilla extract, white vinegar, and red gel food coloring until smooth and evenly red.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
- Fold in the white chocolate chips, saving a few to press on top if desired.
- Press the dough evenly into the prepared pan and smooth the top.
- Bake for 20 to 24 minutes, or until the edges are set and the center looks soft but no longer wet.
- Let the cookie cake cool completely in the pan before removing and frosting.
- Beat the cream cheese and butter until smooth, then add powdered sugar, vanilla extract, and heavy cream. Beat until creamy.
- Spread or pipe the frosting over the cooled cookie cake and decorate with sprinkles if using.
- Slice and serve at room temperature.
Notes
- This cookie cake can be stored in an airtight container at room temperature for up to 3 days.
- For extra flavor, consider adding nuts or different types of chocolate chips.
