Description

A delicious red velvet cookie cake with cream cheese frosting.


Ingredients

  • 1/2 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red gel food coloring
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup white chocolate chips
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon heavy cream
  • 2 tablespoons sprinkles, optional

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper for easier removal.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and fluffy.
  3. Mix in the egg, vanilla extract, white vinegar, and red gel food coloring until smooth and evenly red.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
  6. Fold in the white chocolate chips, saving a few to press on top if desired.
  7. Press the dough evenly into the prepared pan and smooth the top.
  8. Bake for 20 to 24 minutes, or until the edges are set and the center looks soft but no longer wet.
  9. Let the cookie cake cool completely in the pan before removing and frosting.
  10. Beat the cream cheese and butter until smooth, then add powdered sugar, vanilla extract, and heavy cream. Beat until creamy.
  11. Spread or pipe the frosting over the cooled cookie cake and decorate with sprinkles if using.
  12. Slice and serve at room temperature.
