Description
A delicious and creamy side dish made with Yukon Gold potatoes and garlic.
Ingredients
Scale
- 900g Yukon Gold potatoes
- 1 tsp salt
- 2–3 cloves garlic (optional)
- 1/2 tsp black pepper
- 3 tbsp olive oil or vegan butter
- 1/2 cup unsweetened non-dairy milk (almond, oat, or soy)
Instructions
- Peel the potatoes and cut them into evenly sized chunks.
- Place potatoes (and garlic, if using) into a pot. Cover with cold water and add salt.
- Bring to a boil, then reduce to a simmer and cook for 15–20 minutes until fork-tender.
- Drain the potatoes well and return them to the hot pot. Let them steam dry for a few minutes.
- Mash the potatoes with a masher or ricer to your desired texture.
- Add the warm non-dairy milk and olive oil or vegan butter. Mix gently until smooth.
- Season with pepper and additional salt if needed. Serve warm.
Notes
- Adjust seasoning to taste.
- For a richer flavor, use vegan butter instead of olive oil.
