Description

A flavorful and tender chicken dish made in a slow cooker with salsa verde.


Ingredients

Scale
  • 800 g chicken breast (or boneless, skinless chicken thighs)
  • 340 g salsa verde
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • 1 tablespoon lime juice
  • 2 tablespoons fresh coriander/cilantro (roughly chopped, optional)

Instructions

  1. Place the chicken in the base of the slow cooker. Add the salsa verde, garlic, cumin, and salt.
  2. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender and cooked through.
  3. Shred the chicken using two forks and stir through to coat in the sauce.
  4. Stir in the lime juice and sprinkle with coriander before serving.
