Description

A hearty and flavorful soup made with cabbage, ground beef or turkey, and a mix of vegetables.


Ingredients

  • 1 large head cabbage, chopped
  • 1 pound ground beef or ground turkey
  • 1 cup cooked rice
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Instructions

  1. Rinse and chop the cabbage into small bite-sized pieces. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add a splash of olive oil. Once heated, add the chopped onion and sauté until translucent (about 3-4 minutes). Stir in the minced garlic and sauté for another minute.
  3. Add the ground beef or turkey, breaking it up with a spoon as it cooks. Brown the meat until it’s no longer pink, about 5-7 minutes.
  4. Toss in the chopped cabbage, cooked rice, broth, tomato sauce, diced tomatoes, Worcestershire sauce, thyme, and seasoning. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes.
  6. Taste and adjust seasonings if needed. Serve hot, garnished with fresh herbs or a sprinkle of cheese, if desired.

  • Choose ground turkey for a lighter option.
