Instructions

  1. Prep your vegetables by washing and chopping them into uniform pieces.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, cooking until fragrant and translucent (about 3-4 minutes).
  3. Add cubed eggplant to the skillet and sauté until tender (approximately 5-7 minutes).
  4. Stir in sliced zucchini and diced bell peppers; cook until softened (about 5 minutes).
  5. Pour in crushed tomatoes along with salt, pepper, basil, and thyme. Simmer gently for 15-20 minutes to meld flavors.
  6. Adjust seasoning if necessary. Serve warm or allow to cool before serving.
